Oh do I love Mexican food!!  Growing up in Southern California I was able to experience some of the best authentic Mexican food and to be honest, I think I could eat it every day.  Anything can be made into a taco, right??

Generally, when I am making a Mexican meal, I usually have a protein such as Carnitas (pork), shredded beef, mahi mahi or a marinated skirt steak.

For a side dish my family loves the Mexican rice or pinto beans but my favorites are on the lighter side…a yummy Cilantro, Lime Cole Slaw or a fresh Black Bean Salad.

I most definitely will top it all off with some homemade salsa and guacamole!!!

Now, with Mexican food, I like a citrus heavy drink so this year I am making my Lemon, Lavender Mocktail.  Now, that is a perfect pairing!
