Cince De Mayo

  Oh do I love Mexican food!!  Growing up in Southern California I was able to experience some of the best authentic Mexican food and to be honest, I think I could eat it every day.  Anything can be made into a taco, right?? Generally, when I am making a Mexican meal, I usually have a protein such as Carnitas (pork), shredded beef, mahi mahi or a marinated skirt steak.  Carnitas   Shredded Beef   Grilled Skirt Steak Platter    Mahi Mahi Fish Tacos             For a side dish my family loves the Mexican rice or pinto beans but my favorites are on the lighter side…a yummy Cilantro, Lime Cole Slaw or a fresh Black Bean Salad.   Pinto Beans   Mexican Brown Rice   Southwestern Black Bean Salad   Cilantro Lime Cole Slaw       I most definitely will top it all off with some homemade salsa and guacamole!!!   Easy Homemade Salsa    Guacamole     Now, with Mexican food, I like a citrus heavy drink so this year I am making my Lemon, Lavender Mocktail.  Now, that is a perfect pairing!   Soothing Lemon, Lavender Mocktail   I hope you all have a wonderful celebration in your own way! Mother’s Day

   I have two favorite desserts in my recipe library here and either of them would be a lovely addition to a Mother’s Day celebration.  The first is a Strawberry Almond Cake and since strawberries are in season this is the perfect time to enjoy it.  I also love the Coconut Cream Pie with Chocolate Ganache.  While both of these sound really decadent, they are both incredibly low in sugar and are gluten-free as well which works really well for me.  Both these are easy to make and perfect for just about any spring or summer celebration!   Strawberry Almond Cake     Coconut Cream Pie with Chocolate Ganache         © The Sown Life LLC, 2020
