Ingredients
- 4 slices thick-cut bacon sliced into 1-inch pieces
- 1 medium onion chopped
- 3 ribs celery chopped
- 3 carrots chopped
- 1 sweet potato cubed
- ¾ C pesto, jarred
- 4 C Chicken stock
- 2 cans white cannellini beans drained and rinsed
- 4 sausages I used Trader Joe's chicken sausage
- 3 C chopped kale
- salt and pepper to taste

Instructions
- In a medium dutch oven, fry up bacon until crisp.
- Let sit out on a paper towel to soak up excess grease.
- Strain out most of the bacon fat leaving about a TBS. in the bottom of the pan.
- Return Dutch oven to stovetop and add onions, carrots, and celery. Saute until soft.
- Add garlic and saute for an additional minute.
- Add sausage and allow to heat through.
- Add pesto and allow to cook for about a minute to bring out the flavor.
- Add chicken stock, beans, and sweet potato and allow to come to a simmer.
- Simmer until sweet potato is soft.
- Add cooked bacon and kale. Salt and pepper to taste. Enjoy!
