Ingredients
4
slices
thick-cut bacon
sliced into 1-inch pieces
1
medium onion
chopped

ribs
celery
chopped
3
carrots
chopped
1
sweet potato
cubed

pesto, jarred

Chicken stock
2
cans
white cannellini beans
drained and rinsed

sausages
I used Trader Joe’s chicken sausage

chopped kale
salt and pepper to taste
Instructions
In a medium dutch oven, fry up bacon until crisp.
Let sit out on a paper towel to soak up excess grease.
Strain out most of the bacon fat leaving about a TBS. in the bottom of the pan.
Return Dutch oven to stovetop and add onions, carrots, and celery. Saute until soft.
Add garlic and saute for an additional minute.
Add sausage and allow to heat through.
Add pesto and allow to cook for about a minute to bring out the flavor.
Add chicken stock, beans, and sweet potato and allow to come to a simmer.
Simmer until sweet potato is soft.
Add cooked bacon and kale. Salt and pepper to taste. Enjoy!
