I love a good Turkey sandwich the day after Thanksgiving, topped with cranberries, stuffing and gravy but I especially love coming up with new ways to use leftover turkey.
A few of my favorites are the Simple Enchilada Casserole. The recipe calls for chicken so cooked turkey is an easy substitute.
Turkey Masala is absolutely delicious and again since the recipe calls for chicken it is an easy swap with turkey. It also cuts out a few steps since the turkey is already cooked.
Turkey Tacos are a quick and easy “go to” with all of your family’s favorite toppings. We love some greens, chopped cilantro and green onion, guacamole and salsa. I use Trader Joe’s taco seasoning to flavor the meat.
Turkey and White Bean Chili is so great this time of year and this is a really healthy version. Instead of cream you use pureed cauliflower which doesn’t sound like it would tase the same but it’s delicious!
Another great soup is the Pesto, White Bean and Sausage Soup. I just add in some turkey to the existing recipe. The flavor is all there. Just make sure you taste it ahead of time to make sure you have enough salt.
Last but not least is a good Turkey Salad. I make this in a similar fashion to a chicken salad with a base of mayo, a dash of dijon mustard and adding in some celery, green onion, fresh parsley, dried cranberries and a dash of cayenne. (optional). For a special kick you can add in some curry powder which takes it to a whole new level. You can serve this over a bed of greens or use up leftover bread or rolls from Thanksgiving. Sometimes, I add a spoonful of cranberry sauce on top as well!
