- 1.Put 1 ounce of dried herb in a ball jar.
- Pour boiling water over dried herb to the top of the jar.
- Stir until all the herb has absorbed the water
- Put the lid on and let sit on the counter for at least 4 hours or overnight. (The reason for covering while the infusion is steeping is that many herbs have volatile oils that can dissipate if not covered)
- In the morning, strain the infusion and make sure to squeeze the herb mash to get all the liquid out.
- Cover, refrigerate and drink within the week.
