Instructions
  1. 1.Put 1 ounce of dried herb in a ball jar.
  2. Pour boiling water over dried herb to the top of the jar.
  3. Stir until all the herb has absorbed the water
  4. Put the lid on and let sit on the counter for at least 4 hours or overnight. (The reason for covering while the infusion is steeping is that many herbs have volatile oils that can dissipate if not covered)
  5. In the morning, strain the infusion and make sure to squeeze the herb mash to get all the liquid out.
  6. Cover, refrigerate and drink within the week.
