Slice onion and place at the bottom of the crockpot.
Coat the pork shoulder generously with the adobo seasoning.
4. Heat a large skillet over medium-high heat.
Using rendered pork fat or ghee, sear seasoned pork shoulder until a crust appears on all sides. (Don’t rush this step because this is where the flavor comes from) This will take about 12 minutes or so.
Place seared pork on top of onions in crock pot.
Pour the bottle of beer into the skillet to deglaze the pan using your spatula to get up any brown bits from the bottom. Let alcohol cook off for about 2 minutes.
Pour beer mixture over the pork in the crockpot and put the lid on.
Cook on high for about 4 hours and then on low for about 2 hours. If you are going to be away all day just put your crockpot on low and the pork can cook 8+ hours until ready to eat.
Remove pork from crockpot and shred adding any juices you might need for moisture.
