Moroccan Spiced Leg of Lamb with Roasted Pepper Aioli

  My family loves this lamb recipe and I will make it every spring for either St. Paddy’s Day (of course, we are Gleeson’s) or for a delicious Easter Dinner! Lamb makes Easter seem much more special to me. I like to make my Cauliflower Mash as the perfect side dish alongside a mixed green salad. The leftover Roasted Pepper Aioli works amazing as a spread on a leftover lamb sandwich. Yum!! Your family will love this recipe, I’m certain. If you’ve never made lamb before, give it a try this spring!   Ingredients: For the Moroccan Spice Blend: 1 T allspice 1 tsp. finely ground black pepper 1 ½ tsp. fennel seeds 1 tsp. Cumin 1 tsp. Coriander 1 tsp. Cinnamon ¼ tsp. ground Cloves   Directions: 1. Grind fennel seeds in a coffee grinder or with a mortar and pestle until finely ground. Add in other spices and blend well.     For the Roasted Pepper Aioli: ½ C walnuts 1 C avocado oil mayo 3 garlic cloves 2 red roasted bell peppers 1 small red chili 1 T coconut sugar Juice of 1 lemon Salt & pepper   Directions: 1. Put all ingredients in food processor and process until smooth. Smoky Jalapeno Chicken Skewers with Garlic Yogurt Sauce

  These Smoky Jalapeno Chicken Skewers are the bomb!  There is so much flavor with a bit of heat!. I love recipes that do not have a run of the mill flavor and this chicken has it all in my opinion. It’s easy to marinade in the morning and throw on the grill or grill pan for a quick sear in the evening.  The side dishes can be prepared days ahead so this is a great weeknight meal. Enjoy!     Chicken Skewer Ingredients: 1 ½ jarred roasted bell peppers, chopped ½ C cilantro, chopped ½ C chopped green onion 2 TBS. apple cider vinegar 2 TBS. extra virgin olive oil 1 TBS. paprika ¼ tsp. smoked paprika 2 jalapeno peppers, seeded and chopped 2 cloves garlic 1 TBS. fresh oregano 2 tsp. sea salt 1 ½ lb. boneless, skinless chicken breasts, cut into 1-inch pieces 16 small wooden skewers, soaked in water for 30 minutes   Garlic Yogurt Sauce Ingredients:  1 C plain Greek yogurt 1 garlic clove, minced ½ tsp. sea salt ¼ tsp. pepper 1 tsp. fresh lemon zest   Directions:  1.  Place roasted peppers, cilantro, green onion, vinegar, olive oil, paprika, smoked paprika, jalapeno, garlic, oregano and sea salt in a food processor; process until smooth.     2. Coconut and Mango Black Forbidden Rice

  Have you ever tasted black forbidden rice?  I had no idea it existed until a few years ago.  I love the nutty flavor and sometimes enjoy it hot for breakfast with raw honey and almond milk. This Coconut and Mango Black Rice is the perfect side dish to the Smoky Jalapeno Chicken Skewers that I posted last week.  I like to make extra because it goes really well with almost any form of protein. I like Lotus Foods Heirloom Forbidden Rice and purchase it on Amazon. It is linked below! Enjoy!!   Ingredients: 1 C black forbidden rice    1 C coconut milk 1 ¼ C chicken or vegetable stock 3 cloves garlic, minced 1 shallot, finely chopped 1 TBS. coconut oil  1 tsp. Sea salt ¼ C finely chopped mango (optional)     Directions:  1. In a medium saucepan, over medium heat, melt coconut oil. 2. Add garlic and shallot and saute for 1 minute.     3. Add rice and saute rice, stirring so it doesn’t stick to the bottom, for about 3 minutes until toasted.     4. Add coconut milk, broth and salt.     5. Follow directions on the back of the rice package.  6. When rice is done, add mango (if using) on top of rice and put the lid on.  Allow mango to heat up. 7. Stir and serve! Vegan Lentil and Pumpkin Seed Curry

  Here is to all my vegan friends! I have come up with a very protein-dense Lentil and Pumpkin Seed Curry.  It is so yummy that you meat lovers will not miss a thing. There are lots of cruciferous vegetables and also our beloved sweet potato. Oh, and don’t forget all the toppings!!!  I love serving this alongside the Coconut Mango Black Forbidden Rice I posted last week. This curry is so creamy and delicious. Vegan or not, I hope that you will try it!!!   Ingredients:  ½ C pumpkin seeds ½ C red lentils 4 C vegetable stock 2 T coconut oil ½ medium red onion 2 garlic cloves 1-inch fresh ginger 3 T curry powder 1 tsp. Garam masala ½ tsp. cumin 1 C chopped broccoli florets (I used thawed frozen broccoli) 1 C chopped cauliflower (I used thawed frozen cauliflower 1 sweet potato peeled and cubed. 1 can coconut milk Salt and Pepper to taste.   Optional Toppings: Toasted sliced almonds Cilantro Diced cherry tomatoes Microgreens   Directions:  1. Soak pumpkin seeds and red lentils in two separate containers overnight.   2. Strain both pumpkin seeds and red lentils.   3. Using a Vitamix, add pumpkin seeds and lentils and 4 cups of the vegetable stock. Process until completely smooth.  Set aside.     4. Pesto, White Bean and Sausage Soup

  I’ve got another top-notch soup recipe for you!! I am riding the soup train as long as the weather is cold! This Pesto, White Bean and Sausage Soup is super easy and should be enough for 2 meals which makes it a great solution for a busy week.  Take advantage of the lingering cool temps and make some soup as part of your dinner routine. This pesto soup is packed with delicious flavors and awesome ingredients that will heal and nourish your body.      Ingredients:  4 slices thick-cut bacon, sliced into 1-inch pieces 1 medium onion, chopped 3 ribs celery, chopped 3 carrots, chopped 1 sweet potato, cubed ¾ C pesto (I used a jar from Trader Joe’s) 4 C chicken stock 2 cans white cannellini beans, strained and rinsed 4 sausages (I used garlic chicken sausage from Trader Joe’s), sliced 3 C chopped kale Salt and pepper to taste   Directions: 1. In a medium dutch oven, fry up bacon until crisp.     2. Let sit out on a paper towel to soak up excess grease. 3. Strain out most of the bacon fat leaving about a TBS. in the bottom of the pan. 4. Madelyn’s Shrimp Pad Thai

    This Shrimp Pad Thai is a dish that my daughter, Madelyn, and I put made on one of those special nights of cooking together. I think we were both thrilled with how it turned out! If you love a good Pad Thai then this recipe is for you.  It is easy and you can really use any source of protein you would like.  Make tonight special You will not be disappointed!     Sauce Ingredients: 4 T tamari 2 T honey 2 T fish sauce 2 T brown rice vinegar 2 T Sambal Oelek chili paste   Pad Thai Ingredients: 12 oz. brown rice pad thai noodles 1 lb. wild-caught shrimp, thawed ¼ C butter or ghee 1 T sesame oil 3 carrots, chopped 1 shallot, minced 5 cloves garlic, minced 5 green onions, chopped in 2-inch pieces ¼ C cilantro, finely chopped ½ C basil, finely chopped ½ C roasted, salted peanuts, finely chopped 1 lime, cut into wedges     Directions: 1. In a large stockpot, heat water and cook noodles as directed. 2. To make the sauce: mix together tamari, honey, fish sauce, brown rice vinegar and Sambal Oelek in a small jar with a lid. Mung Bean Dahl with Fig and Cashew Quinoa

  This recipe is so incredibly nourishing and it is so good if you struggle with any type of inflammation! It is delicious while being easy to digest.  Mung beans are amongst the easiest of beans to digest so I highly recommend them.  The fig and cashew quinoa is the perfect base and I love the toppings of cashews, yogurt or feta cheese to give more protein and healthy fat!  If you are vegan just leave out the cheese. This recipe can be modified to fit your specific tastes and needs!      Ingredients for the Dahl:  1 C mung beans (lentils are a great replacement) 1 ½ T ghee 2 Thai chilies seeded and finely minced (optional) 1-inch fresh ginger 2 tsp. cumin seeds 2 tsp. mustard seeds ½ tsp. coriander 1 ½ tsp. turmeric ½ tsp. pepper Pinch of cloves 1 C chopped spring onions 2 garlic cloves, finely minced 4 C vegetable/ chicken stock 2 C finely chopped greens (kale, swiss chard, spinach) 1 T lemon zest Juice of 1 lemon 1 tsp. salt   Directions:  1. Soak mung beans for 24 hours then drain and rinse. 2. In a dutch oven over medium heat, melt ghee.   3. Spring Green Soup

  This soup turned out really good especially considering I just came up with it when I had some extra zucchini and dill lying around. It turned out so perfectly! Simple, healthy and absolutely delicious!  Now to top it off, (because you know I love a topping) I added a recipe for lemon-infused greek yogurt.  It’s no joke when I say a dollop of this makes the entire soup experience for me.  I hope you all love this recipe as much as I do.   Ingredients: 2 T ghee 3 spring onions/leeks, finely chopped  (spring onions are the size of leeks) 4 garlic cloves, finely minced 4 zucchini, halved then sliced 1 ½ C frozen peas, thawed 2 C swiss chard, finely chopped 4 C chicken or vegetable stock 1/2 C fresh dill  Salt & Pepper to taste 1 T Greek yogurt per bowl for creaminess   Lemon Infused Greek Yogurt Ingredients :  1 cup plain Greek yogurt 2 tsp. lemon zest ¼ tsp. sea salt     Directions for yogurt: Blend together yogurt, lemon zest and salt.  Let sit in the fridge for 6 hours to chill before using.   Directions for Soup: 1. In a dutch oven, melt ghee over medium heat.  Add in spring onions and saute until translucent. Add garlic and saute for an additional minute.     2. Crunchy Walnut Tomato and Basil Chicken Tenders

Do you have any extra cherry tomatoes that need to be used up.  Candied Cherry tomatoes are absolutely delicious and are so easy to make.  If you don’t have the available time you can use olive oil marinated sun dried tomatoes which are just as delicious. This chicken tender recipe is really easy and so so good!!!  It was an impromptu discovery and it is now a family favorite!  I hope you enjoy it!     Ingredients: 4 chicken tenders 1/2 cup candied tomatoes (you can replace these with oil marinated sundried tomatoes) 14 large basil leaves 4 oz. goat cheese 2 egg whites 2/3 cup chopped walnuts 3 TBS. olive oil salt & pepper   Directions: Preheat oven to 350 degrees. With a sharp knife, slice chicken tender in half but not all the way through. 3. Spread goat cheese in the center of the chicken tender, layering sun-dried tomatoes and fresh basil. 4. Chop walnuts into small pieces. 5. In a small bowl, beat egg whites with a fork until frothy.  Add salt and pepper. 6. Close chicken tender tightly around center ingredients.  Gently dip into egg whites and then roll to coat with the walnuts. 7.  Place on parchment covered sheet pan and drizzle with olive oil. 8. Bake for 15-20 minutes or until chicken is done (165 degrees using an Internal Read Thermometer) 9.  Serve alongside some brown rice pasta drizzled with olive oil and a sprinkle of parmesan!!!  

Pan Seared Chicken Breast

    Ingredients: 4 boneless skinless chicken breasts Salt and pepper Avocado oil Herbs de Provence Directions: 1. Preheat oven to 350 and heat up some avocado oil in a cast iron skillet, (or oven proof skillet of choice) 2. Coat chicken breast with salt and Herbs de Provence 3. Sear chicken breast on both sides until nicely browned. 4. Pop into a 350 oven for 7-9 minutes (7 minutes for a small chicken breast and 8 to 9 for a large chicken breast.) 5. Remove chicken from skillet and allow to rest for 10 minutes on a plate covered in foil. Slice thinly and serve.
